What does the freeze-drying process consist of?

Freeze-drying, also known as vacuum dehydration, is a food preservation process that has become increasingly popular in the food industry, particularly in the preservation of fruits such as berries.

This method allows fruits to stay fresh, tasty, and with a long shelf life without the need for chemical additives. At Bayas del Sur we have eight types of berries to which we apply this process: Maqui, elderberry, calafate, blueberry, strawberry, raspberry, blackberry and cranberry.

At Bayas del Sur we acquire the frozen fruit and then apply the freeze-drying process, which is a process that involves removing the water from them through a sublimation process.

Sublimation is the direct transition from the solid state to the gaseous state without going through the liquid state. This process is carried out in a machine called a freeze dryer.

Advantages of Freeze Drying Berries

The freeze-drying process brings several advantages to those who purchase our products, among them it stands out that it preserves the flavor, color and natural aroma of the berries, and retains most of the nutrients, resulting in a high quality product, as well as a considerably longer shelf life than fresh, dried or frozen fruits. Finally, due to the removal of water, freeze-dried berries are lightweight and easy to transport.

Freeze-dried berries are used in a variety of applications, from the food industry to the manufacture of pharmaceuticals and cosmetics. They are a popular ingredient in cereals, granola bars, yogurts, ice cream, and baked goods. They can also be rehydrated for use in cooking recipes, such as sauces or jams.

In conclusion, the process of freeze-drying berries is an effective technique to preserve them in a way that keeps them fresh and with a long shelf life. This technology allows you to enjoy the nutritional benefits and flavor of berries all year round, regardless of their harvest season.
