Learn about the freeze-drying and concentrated juice processes at Bayas del Sur

At Bayas del Sur, we are committed to bringing the highest quality products to your table. One of the methods we use to preserve our berries is freeze-drying. But what exactly does this process entail?

Freeze-Drying

Freeze-drying is an advanced preservation method that involves removing water from the berries through a process of freezing and vacuum dehydration. Here are the key steps of this process, which we carry out at our plant in Purranque, Los Lagos Region, southern Chile:

Rapid freezing: The berries are quickly frozen at extremely low temperatures.

Vacuum dehydration: Once frozen, they are subjected to reduced pressure, allowing the ice to turn directly into vapor without passing through the liquid state (sublimation).

Nutrient and flavor preservation: This process preserves the nutrients, flavor, and texture of the berries, keeping their properties intact for much longer.

The result is freeze-dried berries that you can enjoy anytime, with the assurance that they are as fresh and nutritious as the first day. Perfect for your smoothies, cereals, and as a healthy snack!

Concentrated juice process

The process of making concentrated juice involves several steps to ensure that the essential flavors and nutrients of the berries are retained. Here’s how we do it:

Selection and Washing: We select the best berries and carefully wash them to remove any impurities.

Juice extraction: The berries are crushed and pressed to extract all their natural juice.

Filtration: The juice is filtered to remove solids, resulting in a pure and clear liquid.

Concentration: Through a low-temperature evaporation process, some of the water in the juice is removed, concentrating its flavors and nutrients.

Pasteurization and packaging: Finally, the concentrated juice is pasteurized to ensure its safety and hermetically sealed to maintain its freshness.

The result is a concentrated juice that you can dilute to your liking or use directly in your favorite recipes, enjoying all the flavor and benefits of berries from southern Chile.
