Liquid ingredient (high viscosity)

They are made by squeezing the berries in a high-performance pneumatic press, to obtain a juice which is clarified and concentrated by vacuum, to finally extract the water at moderate temperatures through vacuum evaporation, without damaging the active ingredients.

It is standardized to a soluble solid percentage of 65% w/w, with a residual moisture of 20-25% w/w. 

Highlights of this product are its 100% solubility in water, vivid color and brightness.

In Mother Nature, each superberry fruit has its own water content, which defines an average °Brix for each type of fruit, which has been defined and published by FAO. Hence, each type of juice concentrate needs an adequate amount of water to add to 1 kg of juice concentrate in order to become natural juice, at the same level as in Mother Nature and, of course, not too diluted.

Concentrated ELDERBERRY juice was originally made in Europe, and is part of the folklore in The Old Continent, where it has been applied for many years in concoctions with and without alcohol, using the flowers of elderberry, and making juices from this fruit. 

At Bayas del Sur, we process the ELDERBERRIES from Patagonia to transform them into a concentrated juice of bright color (among other uses, elderberry is a natural colorant).

The ELDERBERRY has been studied for many years, and they have determined it has beneficial effects for protection against the common cold or to lessen its symptoms. 

In addition, its high polyphenol level would be a prebiotic promoter that stimulates the development of the beneficial stomach bacterium Akkermansia, which allows us to have an optimal balance of our intestinal flora, displacing unwanted bacteria.

Our ELDERBERRY concentrated juice has a high level of anthocyanins, endowing it with a high capacity of protection against the attack of free radicals that are present in our bloodstream generating cellular damage.

Our concentrated juice of Maqui (Aristotelia chilensis) is obtained from healthy and ripe fruits picked from the Maqui tree.

Our concentrated juice is 100% natural, contains no additives, no colorants, no preservatives, or bodying agents, and it is produced following Good Manufacturing Practices (GMPs) and HACCP, according to CRF 21.

The fruit we use is non-gmo and is picked every summer by our network of harvesters, mostly people from Patagonia who have kept alive the harvesting tradition over time, from generation to generation. 

This ingredient complies with FAO’s Codex Alimentarius, European Union’s regulations, and FQPA’s pesticide regulations.

Maqui is the fruit with the greatest antioxidant capacity in the vegetable kingdom; specifically it features a high content of delphinidin (1,360 mg / 100 g of concentrated juice). Our concentrated juice provides the highest level of delphinidins compared to other concentrated juices of berries. 

Other benefits of this Patagonia superfruit are its mineral contributions: By consuming 100 grams of this fruit a day, you get 70% of the RDA for iron, 28% of the RDA for potassium, and 27% of the RDA for calcium.

The fruit we use is non-gmo and is harvested every summer (February-March) by Bayas del Sur’s suppliers following GAPs (Good Agricultural Practices). This ingredient complies with FAO’s Codex Alimentarius, European Union’s regulations, and FQPA’s pesticide regulations.

Blackberries are fruits with a good content of cyanidins, which gives them an attractive and deep purple color. In addition, blackberries are a natural source of vitamin C, with levels of 20-40 mg / 100 g of fresh fruit.

Our concentrated juice of Blueberries is obtained from healthy and ripe fruits that have been cultivated, because wild blueberries (Vaccinium corymbosum) are not produced in Chile. This product has been pasteurized and is stored in a cold chain.

The cranberry is the fruit with the highest content of proanthocyanidin (PACs) of type A, and is a protector against urinary infections par excellence.

The raspberry is the fruit with the highest content of ellagic acid, which is a well-known anticarcinogen par excellence.

Strawberry is characterized by being the fruit with the highest pelargonidin content, which is a neuropathological protector against symptoms of Alzheimer’s disease.

Our concentrated juice of Calafate (Berberis microphylla) is obtained mechanically from this red fruit, which is unique to Chilean and Argentine Patagonia. This product has been pasteurized and is stored by freezing.

In Patagonia, every summer, in the month of February, we organize the logistics for harvesting this wild fruit, to which we apply freezing on the same day it is harvested.

Is a fine powder with a diameter of 400 microns,

Obtained from a single fruit, which has been previously deep-frozen to allow the passage of intracellular ice directly to steam, without going through a liquid state. It is not powder obtained from juice already processed (requires carrier), but is obtained only from deep-frozen fruit, so its bioactive components are present at their maximum value. 

At Bayas del Sur we use the best technology for the generation of lyophilized powder. In our process, the core of the fruit is kept frozen always. In this way, the vitamins and bioactive molecules of the fruit are preserved. 

Our facilities are engineered to obtain a fine powder with an average size of 40 mesh (400 microns, which is very fine powder). 

Our freeze-dried products are used in various areas of the food industry, like in bakery, as bases of smoothies to serve in breakfasts, and also as mixtures in yogurts, homemade ice creams, and toppings, among other uses.

Given its hygroscopicity, our freeze-dried berry powder is a valuable ally in the ice cream industry, since when it is incorporated into ice creams by 3%, it gives them greater resistance to melting. In addition, famous chefs are giving our freeze-dried product an innovative culinary use when they sprinkle it in salads, desserts, and bases for browning meats.

Our freeze-dried powder of Elderberries is obtained with freeze-drying technology from healthy and ripe elderberry fruits (Sambucus nigra) collected in southern Chile.

Before processing the fruits, these are carefully separated from the clusters in a built-for-purpose vibrating equipment. Our freeze-dried powder is 100% natural, contains no additives, no colorants, no preservatives, or maltodextrin, and it is produced following Good Manufacturing Practices (GMPs) and HACCP, according to CRF 21.

This powder is prepared following Good Manufacturing Practices (GMPs) and HACCP, and is made at Bayas del Sur’s lyophilization plant in Purranque, Los Lagos Region, Chile.

The maqui is a wild fruit which is hand-picked in the wilderness of Chilean Patagonia, complying with our Internal Quality Standards, by a select network of Bayas del Sur’s collectors, who, every summer, go out to the mountains and hills to look for this wild fruit in areas previously visited and approved by the CERES Organic Certification Company, from Germany.

Maqui has been shown to contain an outstanding level of POLYPHENOLS, a level which has not yet been matched by any other fruit. That said, just take 2 to 3 teaspoons per day, and you’re done.

It is obtained from the juice of the fruit. The juice is atomized at high speed, and transformed into a fine powder by means of spray drying technology, which evaporates the water in milliseconds, with no damage to the active principles, resulting in a 100% soluble fine powder that shows a deep color.

It is standardized with a maximum residual humidity of 4% w/w.

Our Maqui (Aristotelia chilensis) juice powder has been elaborated from wild maqui fruits. It presents a light violet color, good fluidity, adequate physical stability and a good level of flavonoids.

This product contains extremely high amounts of antioxidants. This noble functional ingredient is highly soluble for instant beverage formulations, and can also be used in dairies, dietary supplements and nutraceutical products.

Maqui is a wild fruit and is hand-picked in virgin areas of Chilean Patagonia by a selected network of Bayas del Sur pickers, who, every summer, head out to the mountains and hills to look for maqui fruits in these areas, following our Internal Quality Standards.
